Baijiu

Baijiu is China's national spirit, traditionally distilled from sorghum or other grains like rice, wheat, and corn. Pronounced "bye-joe," it is the most consumed spirit in the world, yet it remains a thrilling discovery for many Western drinkers. Its flavor profile is famously intense and diverse, categorized by "aroma" types. These range from light and delicate rice aromas to deeply savory, umami-rich "sauce" aromas that carry notes of soy sauce, mushrooms, and ripe fruit.

When choosing a bottle, look for the aroma classification on the label. Beginners often prefer "light aroma" baijiu, which is clean, floral, and slightly sweet, or "strong aroma," which features tropical fruit and anise notes.
