A cocktail to make with it

The Bee's Knees

  • 2 oz Barr Hill Gin
  • 0.75 oz Fresh lemon juice
  • 0.75 oz Honey syrup (2 parts honey, 1 part water)

Combine all ingredients in a cocktail shaker filled with ice. Shake vigorously until chilled and strain into a chilled coupe glass. Garnish with a lemon twist.

The maker

Founded in 2011 by Todd Hardie, a lifelong beekeeper, and Ryan Christiansen, a passionate distiller, Caledonia Spirits was born from a desire to showcase the agriculture of Vermont. Their partnership culminated in using raw, cold-settled wildflower honey to create spirits that honor the hard work of local honeybees.

How it is made

Handcrafted at Caledonia Spirits' custom-built distillery and production estate on the banks of the Winooski River in Montpelier, Vermont. The distillation process utilizes a custom-designed extraction still to gently vapor-infuse organic juniper botanicals.
