St-Germain was created in 2007 by artisanal distiller Rob Cooper, who was inspired by the historic Parisian district of Saint-Germain-des-Prés. Seeking to bring the essence of wild elderflowers to the global bar scene, he developed a proprietary technique to preserve the flowers' volatile aromas without using preservatives.
Every spring, local gatherers in France harvest wild elderflowers over a fleeting few weeks to extract their fresh essence. The delicate blooms are then brought to the artisan distillery and production estate where they are macerated to capture their peak aromatics.
