West Cork Distillers was founded in 2003 by three childhood friends—Denis McCarthy, Ger McCarthy, and John O'Connell—in Union Hall, Ireland. They built the distillery with custom-made stills to preserve artisanal Irish distilling heritage while embracing experimental cask finishing.
Distilled and matured in the coastal environment of West Cork, this whiskey benefits from maritime aging. It is finished in barrels previously used to age local craft stout, imparting unique chocolate and roasted notes.
