West Cork Distillers was founded in 2003 by childhood friends John O'Connell, Denis McCarthy, and Ger McCarthy in Union Hall, Ireland. What began as a humble experiment in a backyard shed has grown into a world-class distillery renowned for its innovative cask finishes and deep community roots.

West Cork Distillers is one of the last independent distilleries in Ireland, operating in the heart of West Cork. They utilize locally grown Irish barley, pristine spring water, and a unique triple-distillation process in bespoke copper pot stills.
