A cocktail to make with it

Irish Penicillin

  • 2 oz Connemara Original Irish Whiskey
  • 0.75 oz Fresh lemon juice
  • 0.75 oz Honey-ginger syrup
  • Float of heavily peated Scotch (optional)

Shake the Irish whiskey, lemon juice, and honey-ginger syrup with ice. Strain into a rocks glass over fresh ice. Float peated Scotch on top if desired and garnish with candied ginger.

The maker

Cooley Distillery was founded by John Teeling in 1987 with the vision of bringing diversity and choice back to the dwindling Irish whiskey industry. Located in the picturesque Cooley Peninsula, the distillery revived dormant historical brands and pioneered peated Irish single malt.

How it is made

Connemara is produced at the Cooley Distillery, which revived the historic 18th-century Irish tradition of drying malting barley over peat fires. This double-distilled single malt offers a uniquely Irish take on peated whiskey, combining peat smoke with classic Irish smoothness.
